Pick trades before you lock them in
A villager gets its job and trades from the job block nearest to it. If you do not like the trades, break the job block and place it again before you trade with that villager. It rerolls the trades.

On Hard, villagers killed by zombies always turn into zombie villagers.

Then feed the zombie villager a golden apple.

Keep it out of sunlight. Once cured, its prices drop a lot.
